I loved your anger release!

I've done the dishwasher thing and it works great so long as you're not so behind on the dishes that it's completely full of dirty dishes when you're canning! Yeah, that's my life lately.

I'm very impressed. I'll only get enough beans to justify blanching and freezing a few. I just did a load of tomatoes yesterday and about wanted to cry when so much of the liquid siphoned out of the jars. Last night I made a hasty decision that I better reprocess them in the morning, so yanked off all the jar lids and angrily poured the contents into refrigerator bowls. (Just putting the jars in the refrigerator would not have yielded the same anger release.) This morning I realized, whoops, what about the lemon juice ratio now? (I'd already added 2 tbsp. to each jar -- would I need to do that again?) I called extension today to ask about that; the helpful lady didn't know, and together we decided spaghetti sauce was probably the safest approach to use those testy tomatoes.

Hey -- have you ever used your dishwasher to sanitize/keep your jars hot? great. If you time it just right you can have them hot and wet right when you want them, without using up another burner on your stove.

WOW. You make it look so easy!

I'm not into canning. don't own any of the equipment. But someday when I have a bigger house and a stove like yours, I'll fly you out here and you can teach me. I'll be rich by then. :)
